A Traditional Southern Recipe...

 

MATTIE’S GUMBO

3 Tbsp. flour

1 small can crabmeat

1/2 cup oil 

1 bay leaf

2 medium onions 

1 Tbsp. parsley

1 garlic clove

1 cup celery

2 cups tomatoes (canned)

salt

1 1/2 cups okra

chopped pepper

1 lb fresh gulf shrimp




» Brown flour in oil in large iron skillet
» Add chopped celery, onions and garlic
» Cook 5 minutes
» Add tomatoes and okra
» Cook 5 minutes
» Add remaining ingredients and pour in 3 pints of hot water
(par-boil shrimp in
crab boil and add 1 cup of shrimp stock as part of the liquid)
» Transfer to larger pot if necessary
» Simmer 1
1/2 to 2 hours
» Add salt and pepper to taste
» Serve over rice
